Lechon Manok is a Filipino specialty during Festival or any celebration.
Cooking time:
3 hours
Ingredients:
1 (2 to 3 lbs.) whole chicken
Marinade
5 thumbs ginger, crushed
6 cloves garlic, crushed
1 stalk lemongrass, bottom part crushed
1 teaspoon rock salt
1/2 teaspoon ground black pepper
1-2 cups 7-up
Stuffing:
1 stalk crushed lemongrass (tanglad)
2 cups of green onions (dahon ng sibuyas)
Directions:
1. Combine all the marinade ingredients and mix it in a large bowl.
2. Stuff the chicken with lemon grass
3. Place the chicken in a container and pour the marinade in. (seal and refrigerate overnight.)
4. Prepare to roast the chicken on the grill or skewer the entire chicken and secure the ends with a grill fork.
5. Roast the chicken for about 2-3 hours until the color turns into golden brown to little char. (turn the chicken slowly for even cooking)
6. Transfer to a serving plate. (serve with Soy sauce and lemon)
