ARROZ CALDO



Description:

Arroz Caldo means Warm rice.  It is a type of congee and has been a favorite Filipino snack or meal.

Cooking time:

1 Hour and 30 Minutes

Ingredients:

1 ½ lbs chicken, cut into serving pieces
1 ½ cups uncooked rice
33.5 ounces of water (about 1 liter)
1 tsp garlic
2 tbsp fish sauce or Patis
½ tsp ground black pepper
1 cup onion, minced
4 pieces hard boiled eggs
1 cup green onions, minced
2 knobs ginger, julienned
1 piece chicken cube
4 pieces calamansi

2 tbsp cooking oil

Directions:

1. In a pot, Heat the cooking oil then add the garlic, onion and ginger.
    Then, Mix the ground black pepper.

2. Add the chicken cube and stir until the cube melts.

3. Add the chicken and cook until outer layer turns golden brown.

4. Add the fish sauce.

5. Add uncooked rice and pour in water and bring to boil. (cook for a few minutes)

6. Stir occasionally and simmer until rice is cooked (wait for 30 to 40 minutes)

7. Add the hrad boiled eggs


8. Serve hot with garlic and lemon/calamansi.
