Lechon Belly (Leyte Style)
Ingredients:
- 1 slab (2-3 Kilos) pork belly
- 1 tablespoon canola oil
- 1 bundle lemongrass leaves
- 1 small red onion sliced
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1 Sakto size Coca Cola
Instructions:
- Place the pork belly on a flat surface with the skin facing down. add and Rub the salt and pepper on the top part of the pork belly. Let it stand for 15-30 minutes.
- Prepare the lemongrass and onion slices on one the top of belly. Roll of the way to the opposite side making sure the lemongrass and onion slices are inside. Secure the rolled pork belly by tying it. Rub the oil all over the skin.
- Preheat oven to 176 Celsius. Arrange the pork belly in a roasting pan and roast for 2 hours.
- Remove the belly from the oven and brush with Coca-Cola (That's Leyte Style). Put it back into the oven and continue to roast for 30 minutes or until the skin is brown and crispy.
- Remove from the oven. Slice the Roasted Pork Belly and serve with homemade Vinegar with Salt or add chili pepper and garlic for sauce.
